Apricot summer pie. Simple, tasty and beautiful

Apricot curd pie is a delicious combination of soft curd layer and sweet and sour apricots. This dessert is not only delicious but also healthy due to the high calcium content in cottage cheese.

In different countries, apricot pies are prepared according to traditional recipes. In France, apricot pies can be similar to open tarts. For their preparation, sand dough is used, and the filling is made of apricots and custard.

In the Middle East, apricot pies are often made of puff pastry. They are filled with fresh or dried apricots, nuts and spices are added.

Let’s prepare a simple apricot pie with cottage cheese

Ingredients:

  • Curd – 400 g;
  • Sugar – 150 g;
  • Eggs – 4 pcs;
  • Salt – a pinch;
  • Vanilla sugar – 5 g;
  • Butter – 150 g;
  • Wheat flour – 250 g;
  • Baking powder – 10 g;
  • Apricots – 10 pcs.

Preparation of cottage cheese pie:

To cottage cheese pour classic and regular sugar, salt, beat eggs, beat the components with a mixer for 3-4 minutes. Melt butter and add to the mixture, stir.

Combine flour and baking powder, sift into the cottage cheese mixture. Knead the dough

into a

thick dough by gently working from bottom to top.

Place parchment in a baking dish, grease it with vegetable oil. ½ of the dough on the bottom, spread with a spatula.

Divide the apricots in two and remove the pips

Place a part of apricots in the dough, cover them with the second part of the dough. Place the rest of the apricot slices on top of the pie.

Bake the pie at 170 degrees for 50 minutes.

You can add almond petals to the top of the pie before baking. After cooking while still hot it is worth sprinkling the pie with powdered sugar.
