Eggplants were first known in India in the 9th century AD. Eggplant spread to other countries thanks to traders from Persia. These people transported the vegetable to Afghanistan and Iran.
Then eggplants became popular in Africa. For a long time, no one took this vegetable seriously, and many were even afraid. Eggplant was an outlandish vegetable. However, in the end it was able to win the trust of people.

Ingredients for pickled eggplants:
- eggplants – 4 kg;
- sweet red pepper – 1.5 kg;
- hot capsicum – 2 pcs;
- tomatoes – 2,5 kg;
- onions – 1,5 kg;
- cilantro – bundle;
- parsley – a bunch;
- salt – 2 tbsp;
- vegetable oil – 600 ml;
- garlic – 2 cloves;
- sugar – 2 tbsp.
Preparation of pickled eggplants:
Remove the stalks from the eggplants, cut into small cubes. Salt the eggplant cubes with a tablespoon, mix and squeeze.
Make cross cuts on each tomato

Pour boiling water over the tomatoes and leave for 10 minutes. Dice
the onions into small cubes

Peel the insides of the sweet pepper and cut into small pieces. Remove the skin from the tomatoes and cut into small cubes.
Pour vegetable oil into a saucepan, heat and place onions

On medium heat fry the onions for 15 minutes, and then put the tomatoes. Cook tomatoes with onions for 15 minutes on high heat, stirring.
Cut hot peppers into rings, put them in the pot with tomatoes and onions, along with sweet peppers. Cook the peppers for 10 minutes, and then put the eggplant. Squeeze the eggplant slices in advance.
Sprinkle salt over the vegetable mixture and stir. Cook the vegetable mixture for 50 minutes on a low-medium heat with a lid.
Chop parsley and cilantro, slice garlic cloves

Pour the sugar into the vegetable mixture, add the parsley, garlic and cilantro and mix. Cook the mixture for 5 minutes under a lid.
Put the eggplant mass in sterilized jars, screw them closed.
Wrap the eggplant mixture in jars in a towel and leave until completely cooled. It turns out to be an interesting side dish for meat and other dishes.
