Ingredients for the dough:

  • Carrots – 200 g;
  • Egg – 2 pcs;
  • Date syrup – 3 tbsp;
  • Baking soda – 1 tsp;
  • Ground almonds – 200 g.

Ingredients for the cream:

  • Cottage cheese – 150 g;
  • Butter – 25 g;
  • Maple syrup – 1 tsp.

Preparation of carrot cake:

In a blender shred carrots as finely as possible.

In a separate container pour the date syrup, add ground almonds, yolks and carrots, mix until homogeneous
