Beet salads are delicious, healthy and always varied. The fact is that beets are a universal product that can be combined with different ingredients. For example, beets are combined with cabbage, onions, mustard, garlic, walnuts and even prunes.

Beets are one of the oldest cultivated plants on the planet. Beets were first used for food over 4,000 years ago. This is confirmed by ancient records from Persia, the Mediterranean and ancient Babylon. However, earlier, the petioles and leaves were used for food. It was only later that people began to cook the beet fruit itself. Wild beets are still found in the nature of the Mediterranean.

Now beets are a source of vitamins and minerals. It’s a great vegetable to keep your immune system strong in winter.

Ingredients for salad #1:

  • boiled beets – 2 pcs;
  • Peking cabbage – 150 g;
  • green onion – bundle;
  • parsley – a bunch;
  • unrefined vegetable oil – 3 tbsp;
  • lemon juice – 2 tbsp;
  • French grain mustard – 1 tsp;
  • honey – 1 tsp;
  • salt.

Preparation of beet salad №1:

Grate beets on a coarse grater. Remove the hard part with a leaf of Peking cabbage, finely chop the leaves, as well as green onions and parsley.

Add greens and Peking cabbage to the beets

For the dressing, mix vegetable oil with lemon juice, French mustard and honey.

  • Boiled beets – 2 pcs;
  • Parsley – 1/2 bundle;
  • Garlic – 2 cloves;
  • Walnuts – 30 g;
  • Prunes – 70 g;
  • Vegetable olive oil – 3 tbsp;
  • Lemon juice – 1 tbsp;
  • Ground black pepper – 1 pinch;
  • Salt – 1/4 tsp.

Preparation of salad #2:

Boiled beets rub on a coarse grater, chop finely parsley, pass through the press garlic cloves, mix the components.
