Lemon is a controversial citrus fruit. The fact is that it is very useful for the human body. At the same time, lemon is so sour that it is almost impossible to use it in everyday life.
However, mankind is no longer able to somehow get rid of lemon. The taste of this fruit has become a kind of drug for each of us.

Ingredients for lemon cookies:
- milk – 600 ml;
- lemon – pcs;
- eggs – 5 pcs;
- sugar – 125 g;
- vanilla sugar – 10 g;
- cornstarch – 50 g;
- water – 100 ml;
- butter – 80 g;
- salt – a pinch;
- flour – 120 g;
- mascarpone – 250 g.
Preparation of lemon cookies:
From the lemon you need to remove the zest, add it to 500 ml of milk. Pour the liquid into a saucepan, bring to room temperature on medium heat. At this time, break a couple of eggs in a bowl, mix with 120 grams of sugar and vanilla
sand. Beat the eggs with sugar until the grains of sand are completely dissolved. Then pour into the egg mass cornstarch, stir. Remove the zest from the warm milk, add the egg mixture. Bring the components to thickening on low heat.

To the mixture of butter and milk, sift flour, knead a similar dough. Cook the dough in a saucepan stirring constantly for 2 minutes. Cool the dough in a separate bowl, then add the remaining eggs and mix.

Put the parchment on a baking tray, use the pastry bag to draw the bases for the cookies – small squares of about 5×5 cm.
Bake the cookie crusts in the oven at 180 degrees for 35 minutes. At this point, you can combine the mascarpone with the cream base, mixing the components thoroughly.
The resulting cakes are cut lengthwise into two parts. The bottom part is smeared abundantly with cream, cover the top of the crust.
For presentation, you can sprinkle the cookies with powdered sugar.
