Zrazy is a dish that has a long history and comes from different culinary traditions. It
is believed that zrazy originated in Lithuania and Belarus back in the Middle Ages. Initially, zrazy were beef or pork patties filled with vegetables, mushrooms or porridge
. Over time, the recipe spread throughout Eastern Europe and acquired different variations
.
Mushrooms, eggs, cheese, vegetables and even porridge were used as stuffing.
Today, zrazy
is served both hot and cold.
Today, zrazy is prepared in many countries around the world, and its recipes may differ depending on the region. For example, in Poland, zrazy are usually made of minced meat with the addition of boiled potatoes or mushrooms.
Let’s prepare unusual zrazy manniki
.
Ingredients for the dough:
- Milk – 600 ml;
- semolina – 125 g;
- Egg – ½ pc;
- Salt – 1 tsp;
- Sugar – 1 tsp.
Ingredients for the filling:
- Green onions – 150 g;
- Boiled eggs – 5 pcs;
- Butter – 30 g;
- Salt – ½ tsp.
Preparation of semolina zrazas:
Mix salt and sugar in semolina. Bring the milk to a boil, pour the semolina mixture into it, cook thick semolina porridge
. 3-4 minutes later remove the semolina from the heat and leave to cool. For the filling, chop green onions, chop finely boiled
eggs. Mix eggs with onions, butter and salt. Gradually add the beaten egg to the semolina porridge. It is important not to overdo it, so that the semolina does not become liquid.
Sprinkle the table with flour, from the warm porridge form small tortillas
.
Put stuffing in each flatbread, seal inside.
Place the zrazy on a flour-dusted surface, seam side down.
In a frying pan with vegetable oil, fry the zrazy on both sides until golden.
You get tasty manniki zrazy with egg and onions. Of course, you can repeat the recipe with potato filling or jam.
