Pirogi is one of the main dishes of Russian cuisine. Many people associate Russian cooking with lush and fragrant pies from the oven. The
tradition of making small pies did not begin immediately. The fact is that initially housewives cooked quite large pies for the whole family. However, the younger members of the family sometimes did not have enough pie. Children were always the last in line for their piece.
Therefore, in order not to leave the kids hungry, women invented to cook not one big pie, but many small ones.
Later, cooking pies had more practical uses. For example, pies were convenient to take with you in the field.
Pies were prepared with a lot of fillings

Most often baked cabbage or mushroom pies. These products were the most available in the peasant environment.
Let’s cook together cabbage fried pies
Ingredients:
- Kefir – 250 g;
- Egg – 1 pc;
- Flour – 450 g;
- Vegetable oil – 40 g;
- Sugar – 25 g;
- Salt – 5 g;
- Leavening agent – 10 g.
Ingredients for stuffing:
- Cabbage – 1 kg;
- Salt;
- Sugar;
- Butter – 50 g;
- Eggs – 7 pcs.
Preparation of cabbage patties:
Mix flour with salt, sugar and baking powder, break an egg into the mixture and pour in vegetable oil. It’s best not to use baking soda in place of the leavening agent. The leavening agent starts to work when the dough is heated. When frying it is more optimal, the patties will turn out more puffy and golden.
Pour warm kefir into the mixture, kneading with a spatula spike. On the table, continue kneading with your hands until the dough is elastic
. Put the dough under cellophane for half an hour. For the stuffing, coarsely chop cabbage, stew it in butter until soft.
Rub boiled eggs into the stuffing, salt, sprinkle sugar on the cabbage, mix. Knead the dough and divide it into 80 gram rolls
. Leave the rolls for 10 minutes under cellophane. Lubricate the work surface with vegetable oil, roll out the koloboks into 1.5 cm thick tortillas
. Put the filling into the tortillas and pinch the edges of the dough. Heat a large amount of vegetable oil in a frying
pan. It is better to choose a smaller diameter of the pan so that the patties fry faster. The optimal oil temperature is 170 degrees C.
Put the patties in the hot oil and fry on each side for a couple of minutes.

Be sure to place the patties in the oil seam side down.

You get ruddy golden patties with cabbage. This dough is also suitable for other fillings: from fish to mushroom or meat.
