Bratislava bagels. Flavorful soft bagels with juicy filling

Bratislava horns are a dessert that is popular in Slovakia and some other Central European countries. They are small tubes of crispy dough filled with vanilla cream or pudding.

The dough is usually made with flour, sugar, eggs, butter and leavening agent

The filling is made of milk, cream, sugar, starch and vanilla.

The finished dessert can be sprinkled with powdered sugar, cinnamon or chocolate chips. Bratislava cones turn out tender, airy and very tasty.

They are perfect for a tea party or coffee break.

Ingredients for the dough:

  • milk – 175 g;
  • yeast – 20 g;
  • sugar – 25 g;
  • butter – 120 g;
  • sour cream – 200 g;
  • salt – a pinch;
  • vanilla sugar – 10 g;
  • flour – 450 g.

Ingredients for the filling:

  • poppy seed – 120 g;
  • walnuts – 120 g;
  • sugar – 120 g
  • milk – 60 g;
  • proteins – 2 pcs;
  • vanilla sugar – 10 g;
  • jam – 50 g.

Preparation of Bratislava cones:

To prepare the filling you need to add milk to the poppy mass, mix. For the dough, pour yeast and sugar into warm milk (up to 30 degrees Celsius), stir. Grate

cold butter on a coarse grater into the dough, create a crumb. Add sour cream, salt and vanilla sugar, pour in flour and knead the dough. Knead

the dough until elastic and not sticky

Divide the dough into 2 equal parts and leave under a towel. In the meantime prepare the filling, add sugar, vanilla sugar, chopped walnuts and proteins to the poppyseed

mixture, stir the poppyseed mixture until homogeneous

Add the jam to the poppyseed filling, pressing it in with a fork.

Pour flour on the table and roll out the dough into a large round layer 2-3 mm thick. Divide the circle into 16 triangles. Put stuffing in the thickest part of each triangle.

Wrap the filling inside the dough: from the thick base to the thin end. Transfer each bagel to a baking tray, smear with egg yolk diluted with water.

Make bagels from the second part of the dough in the same way. Bake the bagels at 190 degrees for 17 minutes.
