The first mention of khachapuri dates back to the Middle Ages. At that time, khachapuri was prepared in mountain villages using the simplest ingredients: flour, water, salt and, of course, cheese.

Over time, the khachapuri recipe changed and improved. Different regions of Georgia have developed their own unique types of khachapuri.
Let’s bake a lazy khachapuri at home.
Ingredients:
- Lavash – 6 circles and 1 large sheet;
- Mozzarella – 150 g;
- Suluguni – 150 g;
- Butter – 80 g;
- Italian herbs – 1.5 tsp;
- Green onions – 100 g;
- Vegetable oil – 1 tbsp.
Preparation of lazy khachapuri:
Grease a frying pan with vegetable oil, lay a large sheet of pita on the bottom.
Rub mozzarella
and
suluguni on a coarse grater, finely chop green onions
.
Sprinkle ⅙ part of cheese and onions on the pita surface, sprinkle with Italian herbs.
Cover the stuffing with a round pita, smear it with butter.
Similarly lay each layer of pita. After all the layers are placed on the pan, tuck the edges of the large pita on top.
Bake khachapuri under a lid in a pan for 7-10 minutes on medium heat. Then flip the khachapuri to the other side using a flat plate.
Bake the khachapuri under the lid for another 3 minutes on low heat.
