Cabbage dumplings that don’t crack – recipe on perfect dough without oil and boiling water!

Varenyky is a dish made of unleavened dough with various fillings: potatoes, mushrooms, cherries, cottage cheese. Traditionally, dumplings are boiled in boiling water and served with sour cream or butter.

This is a delicious dish that can diversify the diet of the whole family.

Moreover, dumplings, cooked by yourself, will be much tastier than store-bought. This is due to the fact that in a homemade dish you can adjust the amount of stuffing and take into account the preferences of the household.

Prepare the dough for dumplings is not difficult. For it you need a few ingredients: flour, eggs and water.

For cooking dumplings, we advise you to use flour of the highest grade. It will make the dough elastic and elastic, but not rubbery. It is

obligatory to add an egg to the dough

It makes the texture of the dough denser, because of which the shape of the dumplings is better held.

Let’s prepare homemade dumplings with cabbage on their own

Ingredients for the dough:

  • flour – 1100 g;
  • salt – 11 g;
  • eggs – 2 pcs;
  • water – 400 ml.

Ingredients for stuffing:

  • white cabbage – 1100 g;
  • onion – 250 g;
  • carrots – 150 g;
  • salt – 1.5 tsp;
  • vegetable oil – 3 tbsp.

Preparation of dumplings:

Cut the onion into small cubes, and rub the carrots on a coarse grater. In a pan with vegetable oil fry on one side of the onion, on the other – carrots. So the onion will become golden, frying will not interfere with the juice of carrots.

Shinkuem small cabbage and put to the fried vegetables, salt and stir. Fry the cabbage with the rest of the vegetables until soft.

The filling must cool down, otherwise the dough will tear.

For the dough, mix salt, lightly beaten eggs and water in flour and

knead an elastic dough

If the flour does not gather into a flaky dough, then add a little more water.

Leave the still heterogeneous dough in cellophane for 30-40 minutes. Next, knead the dough, make it more homogeneous and elastic, roll it into a thin sausage.

Divide the dough into 10 gram

rolls.

Dip each roll in flour and roll into small tortillas.

Put the filling into the tortillas and seal the edges.

It is important not to over stuff the dumplings, otherwise they will crack when cooked.

Leave the dumplings to freeze or cook in boiling salted water for 2 minutes. Frozen dumplings will take 3 minutes to cook.
