Cakes started to be made in ancient Rome. But, the cake recipe from antiquity was very different from what we have now. In the past, cooking was not so much developed. There were no recipes for cream and lush sponge cake, for example. For the most part, cakes resembled a pie with a sweet filling.
In XVIII the concept of cakes changed a lot. That’s when confectioners started getting processed sugar. Many new confectionery delights were invented. The French in this respect succeeded greatly. For this reason, France is considered the birthplace of confectionery.
