Cake “Leningradskoe”. Developed in the USSR, easy to prepare at home

A separate niche in the cooking of the Soviet Union is occupied by recipes for various baked goods and desserts. Since the country was closed, the delights of French, Italian and American cuisine did not come to the USSR.

Chefs had to substitute for the dishes known abroad. Therefore, new original recipes were born, which many people now remember with nostalgia.

One of the favorite desserts of Soviet children was potato cake. They also ate korzhiki, sochni and pirozhki. In Leningrad there was a cake – “Leningradskoe”, which made a sensation in the small homeland.

Let’s make this cake at home.

Ingredients for “Leningradskoe” cake:

  • powdered sugar – 120 g;
  • puff pastry without yeast – 500 g;
  • water – 100 ml;
  • cream 33% – 300 ml;
  • milk – 100 ml;
  • eggs – 3-4 pcs;
  • butter – 100 g;
  • flour – 200 g;
  • salt – a pinch;
  • sugar – tsp.

Preparation of “Leningradskoe” cake:

In a saucepan you need to combine water and milk, add butter there.

After the

, bring the mixture to a boil, pour sugar and salt into the liquid. As soon as the mixture boils, turn the heat down to low.

Pour the flour into the milk mixture, mix in the saucepan using a spatula to form a non-sticky and soft lump. The resulting lump is slightly cooled in a bowl, break the eggs to it and mix.

The dough should not be thick, but not liquid. Separately roll out a layer of puff pastry without yeast to a thickness of about cm.

Make a mark on the puff pastry, visually dividing it into 9 squares.

Transfer this dough to a baking tray lined with parchment. Place 1.5 tablespoons of the previously prepared dough on the squares of dough.

Connect the ends of the squares of puff pastry, closing the inside of the prepared dough. Bake in the oven at 190 degrees for about 35-40 minutes.

In the meantime, whip cold cream with a mixer until stiff peaks form. Gradually pour powdered sugar into the cream.

Put the cream into a pastry bag. Poke the prepared buns with the sharp end of the bag and fill their cavity with cream.
