One of the most interesting confectionery items is the cake. It is cakes that have always been the center of attention of any celebration. Many countries compete for historical superiority in the preparation of this product.
Archaeologists assure that the cake could only appear in a country that was very rich for its time. The fact is that for the preparation of cakes even 2000 years ago needed a large number of ingredients. Therefore, only the richest people could afford to cook a cake. Most likely, cakes were cooked either in the Middle East, Ancient Greece or the Roman Empire.

Velvet cake batter ingredients:
- eggs – 4 pcs;
- vegetable oil – 220 g;
- flour – 350 g;
- carrots – 400 g;
- sugar – 350 g;
- leavening agent – 2 tsp;
- cinnamon – pinch;
- orange zest;
- walnuts – 200 g;
- butter – 20 g;
- salt – 1/2 tsp.
Ingredients for the cream:
- kefir 3,2 % – 1 liter;
- sour cream 20% – 400 g;
- butter – 200 g;
- powdered sugar – 200 g.
Preparation of velvet carrot cake:
Dry the walnuts in the oven. Melt butter, pour it to the nuts and salt. Put the walnuts in the refrigerator.
In a bowl, beat the eggs, beat with a mixer, gradually add sugar. Pour vegetable oil to the egg mass, pour cinnamon and orange zest.
Shred peeled carrots through a fine grater, put them into the egg mass. Chop cold walnuts finely, pour them into the egg mixture.
Mix the egg mixture with flour, previously combined with baking powder, knead a slightly thick dough. Pour the dough into the baking mold.
Bake the biscuit at 180 degrees for 25 minutes.
Divide the biscuit into 3 cakes, seal in cling film. Remove the convex part of the top crust, crumble it into crumbs.
For the cream, whip kefir with sour cream, leave in the refrigerator under the foil for 12 hours. Mix the resulting cheeze cream with whipped butter.
Pour powdered sugar into the cream, stir. Smear each cake with cream, assemble the cake.
Smear the sides and top of the cake with cream, sprinkle the sides with biscuit crumbs.
You can decorate the cake with walnuts.
Be sure to put the cake in the refrigerator for a couple of hours for soaking.
