Charlotka is one of the most popular apple pie recipes. However, not everyone knows that charlotte is a French dessert made of apples. The classic French recipe for charlotte implies the addition of custard, liquor and other fruits except apples.
In CIS, it was decided to exclude alcohol and custard from the charlotte. As a result, the apple pie turned out to be more meager in flavor.
Until the XX century, only people from the upper class could afford charlotte, because it was cooked strictly according to French rules.
Let us share the recipe of modern lush
charlotte.
Ingredients for charlotte:
- Apples – 4 pcs;
- Sugar – 160 g;
- Flour – 160 g;
- Eggs – 4 pcs;
Ingredients for roses:
- Apples – 4 pcs;
- Water – 500 ml;
- Sugar – 120 g;
- Juice of half a lemon.
Preparation of the charlotte:
For the roses on the charlotte do not peel the apples, remove only the seed pods. Cut apples
into
thin slices – 1-2 mm thick.
Pour water and lemon juice into a saucepan, pour sugar and bring to a boil. Put the apple slices into the syrup and cook for a couple of minutes – no more.
It is recommended to divide the apples into 2 parts and cook separately
.
After boiling, place each slice separately on a plate to drain.
For the dough, peel the apples and cut into small cubes. Break eggs, salt and granulated sugar into a bowl. Beat the eggs with a mixer first on low and then on high speed for 8 minutes.
Pour the flour into the egg mixture, gently knead the dough. Pour the apple slices into the dough and mix.
Cover the baking dish with parchment – bottom and walls. Spread the dough into the mold in an even layer. Overlap 6-7 apple slices, boiled in syrup beforehand, on the board. Roll the apple slices into a roll to make a rose.
Place the roses in the dough.
Bake the pie at 180 degrees for 35-40 minutes in the oven.
Don’t forget to check the readiness of the pie with a wooden skewer – it should come out of the pie dry. Sprinkle the pie with powdered sugar if desired.
