In translation from Crimean Tatar, cheburek is a raw pie. Cheburek is called so presumably because of the way it is cooked. The pie should be dipped into hot oil and fried.
Such dish is available not only among Crimean Tatar peoples, but also among Mariupol Greeks

However, in the second nation cheburek is called more interesting – chir-chir. The
popularity of cheburek came to the Soviet Union – 1970-1980 years. Then the pie could be bought literally everywhere – from the train station to the market.
Let’s tell you how to cook cheburek in pita
.
Ingredients for cheburek in pita bread:
- Ground beef – 400 g;
- Onion – 1 pc;
- Salt – ½ tsp;
- Cilantro – 30 g;
- Water – 50 g;
- Lavash – 10 pcs.
Cooking cheburek in pita bread:
Chop coarsely onions and turn into a mush with a blender. Put the onion porridge to the minced meat,
add
salt to it.
Chop cilantro, add it to the minced meat with water, mix until homogeneous and beat it. Immediately dip the pita in water, let the liquid drain.
Spread the stuffing thinly on ½ part of each pita, cover with the second part.
Press the edges of the pita firmly with your fingers to seal the stuffing.
Fry the chebureks for 4-5 minutes in hot vegetable oil in a frying pan, make the fire slow.
You get a quick cheburek literally in 10 minutes.
