Meat fried according to a special technology with sauce and marinade came to our country from the countries of Western and Central Asia. In the Caucasus, Georgia and Armenia, kebabs are prepared according to traditional family recipes. As a rule, the methods of cooking and meat preparation are not disclosed to third parties.
Mostly lamb or beef is roasted. Less often and shish kebab is made of chicken, as the structure of the bird meat is drier
. Marinade, proportions of the mixture of spices and sauces play a great role.
We managed to get one interesting recipe for shish kebab, which we are going to share with you.
Ingredients for shashlik in the oven:
- red bell pepper – pcs;
- chicken fillet – kg;
- mutton fat – 200 g;
- onion – 2 pcs;
- ground black pepper – ½ tsp;
- salt – tsp;
- pepper mixture – tsp;
- parsley – tbsp;
- coriander – tsp;
- lemon zest – tsp;
- paprika – tbsp;
- flour – tbsp.
Ingredients for the sauce:
- olive oil – 3 tbsp;
- paprika – ½ tsp;
- tomato sauce – 1 tbsp;
- ketchup – 2 tbsp;
- salt – ½ tsp;
- lemon juice – tbsp;
- 9% vinegar – tsp.
Cooking kebab in the oven:
Cut bell pepper and onion into slices, place in the bowl of a blender, salt and chop. Strain the juice from the vegetables through a sieve, leave it.
Cut into small slices of chicken fillet, similarly chop in a blender. Parsley is finely chopped, put in the chopped meat.
To the meat mass add lemon zest, flour, paprika, coriander, a mixture of peppers along with ground black. In addition to spices in the meat should be put chopped vegetables and mutton fat, the whole mass is thoroughly mixed with hands.
Cover the meat mixture with foil, put it in the refrigerator for a couple of hours.
Then form small cutlets, put them on a wooden stick. Distribute the mixture along the entire length of the stick.
On a baking tray, lay foil, put a grid, move the meat on sticks onto it. At 200 degrees, bake the kebab in the oven for about 10 minutes. At
this time you can prepare the sauce. Pour olive oil into the onion juice, add tomato sauce. After mixing the ingredients, keep adding ketchup, lemon juice, vinegar, salt and paprika to the mixture.
Smear the shish kebab on both sides with the resulting sauce

Continue to bake the meat until ready.
Pita bread, salad of onions, tomatoes and spices will be perfectly combined with shashlik.
The dish resembles lulia kebab, however, the flavor differs from this dish.
