In addition to honey cake, there are many different honey cakes. However, it is this honey dessert that has achieved honor and popularity. The
reason for the demand for honey cake is that this dessert was a favorite of a large number of aristocrats. Members of royal and imperial families elevated Medovik to the status of a special dish.
For this reason, many people in the XIX century perceived Medovik as something elitist. When the dessert became available to ordinary workers, everyone wanted to try this unique cake.

Ingredients for chocolate honey cake crusts:
- honey – 4 tbsp.
- salt – a pinch;
- butter – 140 g;
- baking soda – 2 tsp;
- eggs – 5 pcs;
- cocoa – 2 tbsp;
- sugar – 150 g;
- flour – 215 g.
Ingredients for the cream:
- cream 30% – 300 ml;
- sour cream 20% – 500 g;
- powdered sugar – 100 g.
Ingredients for the glaze:
- dark chocolate – 100 g;
- milk – 60 ml.
Preparation of chocolate honey cake:
In a saucepan, combine honey and butter, melt the components over medium heat, stirring them constantly.
In a bowl, break the eggs, salt them and beat them with a mixer until homogeneous

Gradually pour granulated sugar into the egg mixture, beat until white foam.
In a saucepan with honey and butter pour baking soda, stir and cook over low heat for 3-4 minutes. Sift flour and cocoa into the egg mixture, stir the mass. Pour the honey glaze to the dough, mix the components together.
Cover the baking tray with parchment, spread the dough on the surface.
Spread the dough evenly over the bottom of the tray. Bake the cake in the oven at 180 degrees Celsius for 15 minutes.
The obtained cake is slightly trimmed at the edges, cut into two equal parts. Cut both cakes lengthwise, thus creating 4 thin biscuits.
To prepare the cream, whip the cream with powdered sugar with a mixer. As soon as a lush foam is formed, add sour cream to the cream.
After mixing sour cream with whipped cream, smear the cream on the surface of each cake. Transfer each cake with cream on top of each other. Cover the sides and top of the cake abundantly with cream.
To prepare the glaze, melt chocolate and mix with milk. Biscuit crumbs are created from leftover biscuits, crushed in a blender.
Cover the top of the cake with glaze, sprinkle the sides with sponge crumbs.
If you want to add patterns to the cake, you can create additional frosting from white chocolate and milk.
The cake turns out sweet and honeyed, without the chocolate interrupting the true flavor of the honey cake.
