Beet and Corn Salad is a refreshing and light salad that combines the sweetness of beets and the flavor of corn. The beets are pre-cooked and then sliced. Ingredients for preparing the salad:

  • Boiled beets – 350 gr;
  • Canned corn – 200 gr;
  • Red onion – 1/2 pc;
  • Garlic – 2 cloves;
  • Dill;
  • Parsley;
  • Salt, black pepper;
  • Salad seasoning;
  • Vegetable oil – 2 tbsp.

Salad preparation:

Peel the boiled beets from the peel and cut first into thin straws, and then into cubes.

Open the canned corn and get rid of excess moisture.

Cut the red onion into thin half-rings

Finely chop garlic. Also prepare the dill and parsley by chopping them finely.

In a large bowl combine the beets, corn, red onion, garlic, dill and parsley. Mix the ingredients well. Add salt, black pepper and salad seasoning to taste.

If you don’t have a special salad seasoning, you can use a mix of dried herbs such as basil, oregano, thyme

. Add the vegetable oil and once again mix all the ingredients thoroughly so that they are evenly soaked in the oil and seasonings
