Cutlets are a dish that has remained relevant for centuries. It changes, modernizes, but it is not removed from the table of thousands of families around the world.
Originally, cutlets were cooked only in France. The recipe was as simple as possible – ribs on the bone were fried in spices and oil. The method of preparation remained unchanged for a long time. But, then came to the Russian Empire, where the meat began to be ground. So there were cutlets made of minced meat with onions and spices. Later, the idea of a similar recipe for cutlets took root in other European countries.
Let’s prepare tender chicken cutlets at home.
Ingredients for chicken cutlets:
- minced chicken – 450 g;
- onion – 1 pc;
- eggs – 2 pcs;
- sour cream – 2 tbsp;
- starch – 2 tbsp;
- salt – 1 tsp;
- ground black pepper – ⅓ tsp;
- garlic – 1 clove;
- baking soda – ⅓ tsp.
Preparation of chicken cutlets:
Grate onion and garlic on a fine grater, drain excess liquid. Put the onion into the minced meat along with eggs, sour cream and starch. Salt the minced meat, sprinkle with ground black pepper and baking soda, mix thoroughly.
Leave the mass to stand for 2-3 minutes.
Heat vegetable oil in a frying pan, spread the minced meat on the surface with a tablespoon portionwise.
Fry on medium heat cutlets under a lid on both sides until golden color. After the mince has stood for 3 minutes, do not stir it anymore.
After cooking, place the cutlets on a paper towel to drain the fat. You can serve the cutlets with any garnish or just with sour cream.
