Open pies were and still are relevant for the people of southern Europe. Basically, in Italian cookbooks you can see open pies with different types of pastries. Probably, once pizza was also considered a pie for Italy.
Now in our country we know about pies of both closed and open type. In tribute to tradition, mostly closed pies are prepared. Many people do not prepare pies with an open filling, because the berry jam or fruit flows outside the baked part. But, there are pie recipes from which the filling does not leak out. We want to tell about one of such berry pies.
Ingredients of the dough for berry pie:
- flour – 260 g;
- leavening agent – tsp;
- salt – a pinch;
- vanilla – a pinch;
- sugar – 80 g;
- butter – 100 g;
- egg – pcs;
- sour cream – 50 g.
Ingredients of berry pie filling:
- berries – 500 g;
- sour cream – 250 g;
- sugar – 130 g;
- cornstarch – 40 g.
Preparation of berry pie:
Pour baking powder, salt, vanilla and sugar into the flour, combine with cold butter, create a creamy crumb. Pour cold sour cream into the mixture, crack an egg and start to form a dough block.
It is necessary to knead the dough quickly, so that the butter does not melt. Wrap the dough in cellophane and
put it in
the refrigerator for half an hour.
Next, place the dough in a baking mold (25 cm in diameter), form the bottom and small sides. The base should be in the refrigerator while the filling is being prepared.
Mix the sour cream, sugar and cornstarch. Place berries and sour cream mixture in a saucepan. Over medium heat, stirring constantly, cook the filling.
Bring the mixture to a boil and then remove from the heat. Pierce the bottom of the dough with a fork in several places, lay out the filling, distribute it on the bottom.
Bake the pie at 180 degrees for 40 minutes.
Before

, you can crumble almonds on the filling and add berries as decoration.
This makes a nice looking cake for a tea party.
