Curd cakes are confectionery products whose history dates back to ancient times. The first mentions of sweet dishes made of cottage cheese are found in the history of many cultures.
In ancient Rome, desserts made of cottage cheese, honey and fruit were prepared. In the Middle Ages in Europe, new ingredients for cakes were introduced: spices, sugar, milk and cream. Cakes such as cheesecake and curd cake became popular.
During the Renaissance, cakes became more elaborate and sophisticated. New recipes appeared that combined cottage cheese with fruits, nuts, and chocolate. In the XIX century cakes became even more diverse. New cooking techniques such as baking, whipping cream and making cream appeared.

Let’s prepare a simple cottage cheese cake.
Ingredients:
- Curd – 300 g;
- Coconut shavings – 80 g;
- Milk powder – 40 g;
- Leavening agent – 1 tsp;
- Eggs – 3 pcs;
- Salt – a pinch.
Ingredients for the filling:
- Egg – pcs;
- Milk – 100 ml;
- Butter – 100 g.
Preparation of cottage cheese cake:
Beat the eggs with salt and sweetener to taste until puffy foam. Add cottage cheese to the mixture, beat with an immersion blender until homogeneous for a couple of minutes.
Pour coconut shavings, milk powder and baking powder into the cottage cheese mixture, knead the dough. Place the dough in a mold with a diameter of 16-18 cm, bake at 180 degrees for 25 minutes.
For the filling, bring milk to a boil in a saucepan

Separately beat the egg with sweetener, pour into the milk and bring to a thickening.
In the thickened custard base put cream, whisk to mix. Leave the cream to cool under cling film.
Divide the biscuit into 2 crusts, one of them smear with cream.
Cover the cream layer with a cake, grease it, and also work the edges.
You can decorate the cake with almond petals. It turns out to be a beautiful low-calorie cake.
