Khachapuri is a national Georgian dish, which is a flatbread with cheese. However, depending on the region of preparation and filling, there are many varieties of khachapuri. For example, Adjara khachapuri or Acharuli is a boat-shaped khachapuri filled with cheese and egg.
There are also Guria khachapuri or Guruli. These khachapuri are crescent-shaped and contain cheese filling. Racha khachapuri are square, with a complex filling of cheese and boiled eggs.
Georgian flatbread is prepared in different ways. In addition to the classic recipes for the regions, there are also khachapuri with cottage cheese, with jam and other additives.
Ingredients:
- cottage cheese – 250 g;
- eggs – 2 pcs;
- salt – 1 tsp;
- baking soda – ½ tsp;
- flour – 4 tbsp;
- cheese.
Preparation of cottage cheese khachapuri:
Shred cottage cheese with a fork, salt and beat a couple of eggs into it, mix. Pour
baking
soda into the mixture, mix and add flour.
You can grind barley groats and get a useful barley flour for baking. Place the dough on a
baking
tray and spread it all over the parchment.
Bake the khachapuri at 180 degrees for 15 minutes. Grate cheese on a coarse grater and sprinkle it on the top of the ready layer. Bake the khachapuri for another 5-7 minutes.
