Delicate and flavorful. Italian Soffioni cakes

Cakes, unlike cakes, were not one of the first types of desserts prepared by humans. The history of cakes began 2000 years ago. The first cakes were primitive, so history has not preserved these recipes.

The real flowering of sweet pastries occurred in the XVII century. Then in European cookbooks you could find the first 3 ways of cooking cakes. Basically, these recipes were intended for festive royal and imperial tables.

But, it is worth being selective, so as not to be frustrated in unpalatable desserts. Let’s try to prepare Italian cakes on our own.

Ingredients of dough for Italian cakes:

  • eggs – 2 pcs;
  • salt – a pinch;
  • sugar – 50 g;
  • vanilla sugar – 1 tsp;
  • vegetable oil – 50 g;
  • flour – 250 g;
  • leavening agent – ½ tsp.

Ingredients for the cream:

  • eggs – 4 pcs;
  • salt – a pinch;
  • ricotta – 400 g;
  • sugar – 120 g;
  • lemon zest;
  • lemon juice – 1 tbsp.

Preparation of Italian cakes:

In a bowl with eggs pour salt, classic and vanilla sugar, mix until the grit dissolves. Pour the vegetable oil into the egg mixture, sift in the flour and baking

powder, first with a spatula, then with your hands knead a homogeneous soft dough

Cover the dough with cellophane and send it to the refrigerator for 20 minutes.

For the filling, mix eggs with salt, sugar, ricotta, zest and lemon juice in a separate bowl. Beat the ingredients with a mixer to a homogeneous creamy mass.

Divide the dough into 2 equal parts. Roll out the dough into sheets 5-6 mm thick and 20×30 cm in diameter. Divide the dough into 10×10 cm squares.

Place the squares in the muffin molds, trying to spread them on the walls and bottom.

The corners of the squares should stick slightly out of the molds.

Bake the cakes at 180 degrees for 40 minutes.

This pastry is called Soffioni, it has noticeable notes of citrus. After cooking, you can sprinkle the cake with powdered sugar.
