The history of cookies goes back several millennia. The first mention of cookies can be found in ancient civilizations such as Ancient Egypt and the Roman Empire. Back then, cookies were thin flatbreads made of flour and water that were baked on hot stones or in ashes.

Let’s prepare homemade cookies shells with our own hands.
Ingredients for the dough:
- Flour – 380 g;
- Butter – 200 g;
- Egg yolks – 4 pcs;
- Salt – 1/3 tsp.
- Sour cream – 100 g.
Ingredients for stuffing:
- Egg whites – 4 pcs;
- Sugar – 200 g;
- Vanilla sugar – 8 g;
- Citric acid – a pinch;
- Cornstarch – 2 tsp.
Cooking shell cookies:
Pour cold butter into the flour, grind the flour into a creamy crumb. Add yolks, salt and sour cream to the crumb, knead soft and not sticky dough.
Divide the dough into 30 pieces, form balls. Cover the balls with cellophane and send them to the freezer for 30 minutes.
In a bowl with egg whites pour sugar, vanilla sugar and cornstarch, pour in citric acid. Beat the egg whites with a mixer until glossy white.
Roll the cold balls into thin tortillas with a teaspoon of filling.
Seal the filling inside the tortillas, pinching the opposite ends together.
Place cookies on a parchment-lined baking tray. Bake the cookies at 200 degrees for 10 minutes.
You can also add chopped walnuts to the filling for a more interesting flavor.
After cooking the cookie shells should be sprinkled with powdered sugar.
