Beet dishes are most often associated with Herring under Shuba. However, there are many recipes for beet salads without adding fish. At the same time, such dishes turn out no less delicious and festive.
In addition to festive appetizer salads, there are those that are eaten every day. For example, vinaigrette. Cooking it on a regular basis is not something you want to do. With daily use of vinaigrette, the salad gets boring.
Therefore, we present a way to prepare beet salad with corn.
Ingredients for beet salad:
- boiled beets – 350 g;
- red onion – 100 g;
- canned corn – 300 g;
- garlic – clove;
- dill – bundle;
- vegetable oil – 30 ml;
- salt – ½ tsp.
Preparation of beet salad:
Peeled onion cut into half rings, chop finely a clove of garlic. Peel the peeled beet and cut into small cubes.
Chop dill finely, combine it with beet, onion and garlic in a salad bowl. Remove the liquid from the canned corn, put it in the salad bowl. Fill
the salad with vegetable oil, salt and mix thoroughly and chill in the refrigerator
.
As a result, we have a quick and healthy salad of beets and corn.
Instead of vegetable oil for dressing you can use sour cream or homemade mayonnaise.
