The first mention of filled flatbreads can be found in the history of many cultures. In ancient Egypt and Mesopotamia, flatbreads filled with cheese, vegetables and meat were prepared. In ancient Greece and Rome, flatbreads filled with fruits, nuts and honey were popular.
In the Middle Ages, new ingredients for filled flatbreads appeared in Europe: spices, sugar, milk and cream. Flatbreads such as vatrushka, samsa and kulebyaka became popular.

Ingredients for the dough:
- flour – 700 g;
- kefir – 400 ml;
- sour cream – 3 tbsp;
- salt – 1 tsp;
- sugar – 1 tbsp;
- baking soda – 1 tsp;
- vegetable oil – 2 tbsp.
Ingredients for stuffing:
- suluguni cheese – 400 g;
- egg – 4 pcs;
- green onion – 1 bundle;
- salt – a pinch.
Preparation of tortillas with stuffing:
In a bowl with flour make a depression, pour in warm kefir, add sour cream, pour salt, sugar and soda. First mix the ingredients in the bowl and then add the flour.
Knead a soft and elastic dough, pour vegetable oil into it. Gather the dough into a block, knead it on the table for 5 minutes.
Divide the dough into 4 equal parts, roll out into rolls. Cover the rolls with cling film while preparing the filling.
Grate cheese on a fine grater, grate hard-boiled eggs on a coarse grater. Shred green onions, mix with cheese and eggs, salt.

Put the filling in the middle, gather the edges of the flatbread to the center, like a sack.
Seal the filling inside, put the flatbread seam down. Lightly roll out the flatbread to a diameter about the same as the pan.
Fry the flatbread in a frying pan in vegetable oil for 5 minutes on each side. It is better to fry the second side under a lid on low heat.
