Flatbreads are an important flour product for most people, especially those living in the East. In the deserts, tortillas have been replacing bread for over 1000 years. The fact is that tortillas in Egypt, for example, were cooked directly in the sand. In the deserts, the sand is incredibly hot. Desert dwellers only need to knead the dough and put it under the sand. With the unique technology of dough preparation, it remains clean after baking in the sand.
Now this technique is rarely used. This is mainly how Egyptians entertain tourists. We will show a recipe for really delicious flatbread with cabbage, for the preparation of which you do not need to fly to the desert.
Ingredients for cabbage flatbread:
- Eggs – 2 pcs;
- Milk – 300 ml;
- Water – 300 ml;
- Sugar – 1 tbsp;
- Salt – 1 tsp;
- Dry yeast – 10 g;
- Flour – 360 g;
- Cabbage – 500 g;
- Carrots – 1 pc;
- Green onions – a bunch.
Preparation of cabbage cakes:
Pour warm milk and water into a bowl, break eggs, pour salt, sugar and yeast, mix. Pour the flour into the mixture and knead into a liquid dough. Cover the dough with cling film and leave it warm for half an hour.
Chop cabbage finely, pour boiling water over it and leave it for 10 minutes. Grate the peeled carrots on a coarse grater and add them to the cabbage along with salt and pepper.
Squeeze the cabbage from moisture beforehand
. Put the vegetable mixture into the dough. Chop green onions, pour them into the dough and mix.
Heat vegetable oil in a frying pan, pour 2 ladles of dough. Fry the tortillas for 4 minutes on one side, and a couple minutes on the other.
In the end we have simple cabbage tortillas.
They can be served both for breakfast and for an afternoon snack.
