At the same time, the dinner will be budgetary, since the products are mainly only vegetables. Let’s show how to cook a delicious potato casserole with vegetables.
Ingredients for potato casserole:
- Potatoes – 3 pcs;
- Onion – 1 pc;
- Carrots – 1 pc;
- Bulgarian pepper – 2 pcs;
- Tomato paste – 1 tbsp;
- Green onion – bundle;
- Egg – 3 pcs;
- Fat cream – 200 ml;
- Flour – 150 g;
- Salt – ½ tsp;
- Olive oil;
- leavening agent;
- Cheese – 200 g.
Preparation of potato casserole:
Peel potatoes and grate them on a coarse grater. Leave the potato mass in water. Dice the onion, fry it in olive oil for a minute. Grate
the peeled carrots on a fine grater, fry them together with the onion for a couple of minutes. Pepper is cleaned from the insides and cut into small cubes, put to the fried vegetables, salt.
Add tomato paste to the vegetables, stir and fry for another minute. Pour out the water from under the potatoes, mix it with the vegetable mass. Chop green onions finely and add to the potatoes and fried vegetables.
In a separate bowl mix eggs with cream, salt and flour, beat with a whisk. Add the leavening agent to the mixture, mix and pour into the vegetable mixture.
Lay parchment on a baking tray, spread the vegetable mixture on it in an even layer.
Bake the dish at 180 degrees for half an hour.
Grate cheese finely, sprinkle the top of the casserole. Melt cheese on the casserole at 180 degrees for 10 minutes.
