Varenyky with cottage cheese is one of the most popular and favorite dishes in Eastern European cuisine, which not only pleases with its taste, but also evokes nostalgic memories of home and family feasts. These unusual dumplings filled with soft and flavorful cottage cheese or other cheeses have been on the tables of Slavic peoples for many generations.
Vareniki, as a rule, are prepared with various fillings, and cottage cheese is one of the most common and universal options that perfectly harmonizes with the dough.
The secret of dumplings’ success lies not only in high quality ingredients, but also in the process of their preparation.
The dough should be elastic and soft to mold easily and not tear during cooking. The filling, consisting of cottage cheese, sour milk or bryndza, is often enriched with herbs, spices or eggs, giving the dish additional notes of taste and flavor.
Ingredients for the dough:
- wheat flour – 500 g;
- eggs – 1 pc;
- salt – ½ tsp;
- vegetable oil – 25 g;
- water – 250 ml.
Ingredients for stuffing:
- cottage cheese – 400 g;
- sugar – 4 tbsp;
- vanillin – a pinch;
- butter – 40 g;
- sour cream – 100 g.
Preparation of dumplings with cheese:
Sift the flour, make a depression in it and break the egg there, pour salt and pour in vegetable oil, mix the components. Gradually pour hot water into the mixture, knead the dough with a spatula.
When the dough is no longer hot, knead it on a table dusted with flour to an elastic soft state. Leave the dough warm under a lid while we prepare the filling.
For the filling, mix the cottage cheese with the sugar and beat with a blender until creamy. Pour vanilla into the cream mixture and stir.
Divide the dough into two equal parts, roll each into a rectangular layer 3 mm thick. Divide the dough into small round tortillas using a glass or a special mold.
Spoon a tablespoon of filling into the tortillas, seal inside the dough and shape the dumplings. Heat water in a saucepan, salt, boil after floating for 2 minutes.
Grease a baking mold with butter, sprinkle with sugar to taste. Put the dumplings in the mold and smear with sour cream, bake at 160 degrees from 30 to 45 minutes.
They turn out very tasty dumplings, which should be served with jam.
