Pancakes with stuffing have always been a symbol of a good life. As a rule, such pancakes could afford only the nobility, such as boyars and nobles. The most popular filling for pancakes was meat.
Peasants made pancakes with a less nourishing filling in the form of vegetables and fruits. It turned out delicious, but it was out of reach before the meat
stuffing

In the modern world, the tradition of cooking pancakes with fillings continues. In addition to the classic vegetable and meat appeared many others – with caviar, with eggs and mushrooms. It is worth giving a recipe for cooking pancakes with a filling in the form of chicken breast.
Ingredients of the batter for pancakes with meat:
- flour – 360 g;
- milk – 400 ml;
- water – 400 ml;
- vegetable oil – 4 tbsp;
- egg – pcs;
- salt – 1 tsp.
Ingredients for stuffing:
- chicken breast – 700 g;
- Greek yogurt – 130 g;
- garlic – 3 cloves;
- lemon juice – 2 tbsp;
- mint – 1 tsp;
- paprika – 1 tsp;
- cumin – 1 tsp;
- black pepper – 1 tsp;
- salt – 1 tsp;
- Cheddar cheese – 200 g;
- tomato – 7 pcs.
Preparation of pancakes with stuffing:
Cut the chicken breast into small pieces. In a separate bowl mix yogurt with mint, paprika, cumin, black pepper and salt, put garlic through a press.
Pour lemon juice to the yogurt, mix the components. Put the chicken pieces in the bowl, mix. Leave the chicken to marinate under a lid for 15-20 minutes.
For the dough mix in a deep bowl egg with vegetable oil, milk and water. Pour the flour and salt into the liquid in batches and knead the dough into a liquid dough.
You can also whip the dough with an immersion blender until homogeneous. Leave the dough for 15-20 minutes under a lid.
Fry marinated chicken in a frying pan with a couple of spoonfuls of vegetable oil. Next, cool the chicken meat in a separate plate.
On a drop of vegetable oil, fry the pancakes on each side until the batter sets and is no longer liquid. Similarly fry other thin pancakes.
Fold the finished pancake in half. Put on the folded pancake in the middle of the filling in the form of meat. Grate cheese finely, cut tomato thinly, put to the meat in the middle of the folded pancake.
Seal the stuffing, wrap both corners of the pancake in the middle, we get a cone with stuffing inside. Similarly wrap the stuffing in the rest of the pancakes
. Lay the cones on a frying pan with vegetable oil with the seams downwards.
Fry the pancakes on each side until golden.
As a result, we have pancakes with a colorful filling of chicken meat, cheese and tomato. This is a good way to replace the classic pancakes with meat.
