Beet is one of the oldest vegetables. It was known to people as far back as Persia, from where it got to ancient Rome and Greece. Beets were used to treat many different diseases. The vegetable was forbidden to be consumed by people from the lower strata of the population. Beet was even sacrificed to the gods – it was so important to the peoples of the world.
However, beet later became a symbol of viciousness. This vegetable symbolized the brothel in Pompeii. Because of this, beets were
no
longer consumed by moral ladies.
Nowadays, there are no prejudices from the past towards beets. This is a useful vegetable from which you can make a light salad.
Ingredients for beet salad:
- white cabbage – 300 g;
- carrots – pcs;
- salt – 2 tsp;
- sugar – tbsp;
- boiled beets – 2 pcs;
- dill – bundle;
- parsley – a bunch;
- garlic – 2 cloves;
- dried coriander – tsp;
- Korean salt – ½ tsp;
- 9% vinegar – tsp;
- onion – pcs.
Preparation of beet salad:
Shinkuem finely white cabbage, grate carrots on a coarse grater. Lightly knead cabbage and mix with carrots, add a spoonful of salt and sugar.
Knead cabbage with carrots, then cover and leave for 15 minutes. At this time, rub cooked peeled beets on a coarse grater
. Shinkuem finely parsley and dill. Rub garlic cloves on a fine grater to carrots and cabbage, put beets and greens in the same place. Pour salt, dried coriander and Korean salt into the salad.
Pour vinegar into the salad. Cut onions into quarter rings and lightly fry in a skillet with vegetable oil. Add the onions to the salad and mix thoroughly.
You get a delicious juicy salad of healthy vegetables.
This is a good appetizer for dinner and lunch.
