Ingredients for eggplant appetizers:

  • Eggplants – 8 kg;
  • Tomatoes – 4 kg;
  • Onions – 2 kg;
  • Bell peppers and hot peppers – 3 kg;
  • Garlic – 150 g;
  • Vegetable oil – 1800 liters;
  • salt – 2 tbsp;
  • sugar – tsp;
  • cilantro – 2 bundles.

Preparation of eggplant appetizer:
