Ingredients for fried eggplant:

  • Eggplants – kg;
  • Onion – pcs.;
  • Eggs – 2 pcs;
  • Salt – ½ tsp.

Ingredients for gravy for fried eggplants:

  • Sour cream – 250 ml;
  • Garlic – 5 cloves;
  • Parsley – a bundle;
  • Cilantro – a bunch;
  • Utskho-suneli seasoning – 2 tsp;
  • Black pepper – 1/4 tsp;
  • Salt – 1/2 tsp.

Preparation of fried eggplant:

Cut eggplant into large pieces. Beat eggs in a separate bowl, pour egg mixture over eggplant pieces and stir.
