Soviet cakes are one of those types of desserts that have fallen into oblivion. The fact is that there are few pastry chefs who can make Soviet cakes nowadays. The recipes of many desserts can not be returned, as they disappeared along with those inexpensive canteens and confectionery shops.

Let’s try to cook one of the remaining cakes of the USSR – “Leningradsky”.
Ingredients of the cakes for the cake “Leningradsky”:
- Flour – 350 g;
- Egg – 1 pc;
- Butter – 190 g;
- Powdered sugar – 130 g;
- Vanillin – 1 tsp;
- Salt – 1/4 tsp;
- Leavening agent – 1 tsp.
Ingredients for the cream:
- Butter – 180 g;
- Cooked condensed milk – 180 g.
Ingredients for the glaze:
- Black chocolate – 60 g;
- Butter – 40 g.
Preparation of the cake “Leningradsky”:
In a bowl with soft butter pour powdered sugar, vanillin and salt, add an egg and mix with a spatula. Then beat the ingredients with a mixer until homogeneous.
Sift the flour into the mixture in batches. With the first addition of flour pour baking powder, knead the dough. Seal the slightly sticky soft dough in cling film and put it in the refrigerator for 30 minutes.
Divide the dough into 5 equal parts, each part put in the refrigerator before use.
Roll out the dough piece by piece into a thin layer – thickness 4 mm.
Cover the layer with a plate and cut out an even circle. Bake each cake in the oven on parchment for 12 minutes at 200 degrees.
Before baking do not forget to pierce the cake with a fork over the entire surface.
Bake the rest of the cakes in the same way. The trimmings are also baked – from them we will create crumbs for the cake.
To prepare the cream, beat soft butter with condensed milk with a mixer. For the frosting, melt chocolate and mix with soft butter. Brush
each cake
with the
resulting cream to create a cake.
Sprinkle the sides of the cake and the top with crumbs, decorate with chocolate glaze.
All that remains is to put the cake in the refrigerator for 7-8 hours to harden.
You get a simple cake that cannot be spoiled.
