People have known about pies since ancient times. In fact, cooking this type of pastry began almost immediately after bread and dough were invented. However, there is an opinion that the first pies were not edible. That is, the dough shell was used as a container for food. The filling was put into the inedible dough and carried from home to work.
Later, the cooks of antiquity decided to try to make bread edible. That’s how the first pies were made.
Long after this discovery, pies had a handle. It allowed to carry the pastry. Accordingly, the dough handle was not eaten, but thrown away.

Let’s tell you about how to cook puffy pies without yeast.
Ingredients of the dough for pies:
- Flour – 550 g;
- Kefir – 300 ml;
- Egg – 1 pc;
- Salt – 1 tsp;
- Sugar – 1 tsp;
- Soda – 1 tsp;
- Vegetable oil – 2 tbsp.
Ingredients for stuffing:
- Mushrooms – 300 g;
- Potatoes – 4 pcs;
- Onion – 1 pc;
- Salt – ½ tsp.
Preparation of patties:
In a bowl with eggs pour salt, granulated sugar, pour vegetable oil and kefir at room temperature. Beat the components with a whisk, pour the baking soda, mix again.
Pour the flour into the mixture, knead a soft and not sticky dough. Leave the dough under the lid to rest.
In the meantime, boil the peeled potatoes until ready. Cut onions into small cubes, cut mushrooms into thin slices. Fry onions in a pan with vegetable oil for a couple of minutes.
Add mushrooms to the onions, fry for a couple of minutes until the liquid appears. Pour salt and black pepper to the mushrooms, continue to fry, stirring constantly.

Send the stuffing to cool down. In the meantime, divide the dough into small lumps and roll them into thin small rectangles.
On the edge of the dough layer put the stuffing, wrap inside as if in a roll.
Do not forget to tuck the open edges, so that the filling does not fall out of the roll.
Seam the seams on the patties, in a frying pan heat vegetable oil. Place the patties in the skillet with the seams facing down.
Fry the patties on each side for 40-50 seconds.
