Georgian Kharcho soup – recipe from the 1940 book. Inimitable taste and flavor

Kharcho soup is a traditional Georgian treat. As a rule, it is based on meat broth. Both rice, tomatoes and spices are added here. It differs from other soups by its sharp taste and aroma.

We will prepare this dish according to all canons, we will use the recipe of 1940. However, first we suggest to stock up on pita bread and work up an appetite. After all, this is how it tastes better to eat it!

Let’s start cooking.

Ingredients for kharcho:

  • beef – 1.5 kg;
  • onion – 3 pcs;
  • tomato paste – 70 g;
  • rice – 100 g;
  • tomatoes – 2 pcs;
  • sour pastilla – 20-30 g;
  • garlic – 3 cloves;
  • dill, cilantro;
  • salt, pepper.

Optional:

  • Hot peppers – pcs;
  • Onion – 2 pcs;
  • Laurel leaf – 3 pcs.

Preparation of kharcho:

One and a half kilograms of meat, preferably with bones, cut into pieces and send to boil in a pot. Cook under a lid on high heat until boiling. Then remove the foam, cook on medium heat.

Send to the pot 3 bay leaves, hot pepper, as well as 2 peeled onions. Cook for 1 hour. Sour

pastilla tear into small pieces, pour broth to soften.

Pour some of the broth into a frying pan, finely chop the onion and fry. Cook under a closed lid, if there is not enough fat, add butter. Pour in tomato paste, stir.

Take the meat out of the pan, separate it from the bones. Pass the broth through a sieve. Get rid of onion, pepper and bay leaves.

In the pot send the prepared meat, fried onions and 100 grams of rice. Fill with broth

Put a small amount of softened pastilla, it is important not to make the dinner too sour. Add Svan salt or a mixture of salt and spices. Stir. Also add a tablespoon of dry hot pepper.

Let the soup simmer for 10 minutes. Add garlic and tomato cut through the press.
