Georgian salad “Tbilisi” in a new way. Legend of the festive table

Many people are convinced that salads are a European dish. This means that salads are not prepared in other countries. However, this misconception has long been dispelled. The fact is that salads have become a dish of the world and they are prepared in Europe, Asia, the Middle East and the Far East. Almost all corners of the globe have their own recipes for preparing salads

. It is worth noting that everywhere salads are different and depend on the place of their preparation. For example, in hot countries you can more often find ripe fruits, and therefore, fruit salads appear there more often.

In northern countries, salads made of vegetables, with a lot of meat and mayonnaise are more appreciated. The inhabitants of Georgia and Armenia also do not forget about meat salads. One of such salads is called “Tbilisi”.

Ingredients for salad “Tbilisi”:

  • Onion – 200 g;
  • Salt – ½ tsp;
  • Sugar – ½ tsp;
  • Vinegar – 2 tbsp;
  • Beef – 400 g;
  • Sweet pepper – 150 g;
  • Hot pepper – 20 g;
  • Beans – 250 g;
  • Peas – 250 g;
  • Green onions – 30 g;
  • Cilantro – 30 g;
  • Walnuts – 70 g;
  • Black pepper – ½ tsp.

Ingredients for the sauce:

  • Vegetable oil – 170 g;
  • Garlic – 10 g;
  • Hmeli suneli – 1 tsp;
  • Mustard – 30 g;
  • Egg yolk – 2 pcs;
  • Salt – ½ tsp;
  • Sugar – ½ tsp.

Preparation of salad “Tbilisi”:

Cut the onion into quarter rings, put it in a bowl, sprinkle with salt and sugar, pour in vinegar and mix thoroughly. Cover the onions with a lid and leave to marinate.

Boil the beef in advance until tender, 10 minutes before the end of cooking slightly salted.

Cut the boiled meat into small pieces.

Clean the sweet pepper from the insides and

cut into small

bars. Similarly clean and cut hot peppers

. Put in a salad bowl beef and peppers. Chop walnuts into small pieces. You can dry the nuts slightly beforehand, but do not fry them.

Chop finely green onions and cilantro, put them in a bowl with the rest of the ingredients along with the nuts. Pour out excess liquid from under the beans and dry them, add them to the salad.

Similarly rinse and dry green peas, add them to the salad. To prepare the sauce, in a deep bowl mix vegetable oil with mustard, salt and sugar, egg yolks, hopeli suneli and garlic cloves

. Cover the ingredients with an immersion blender and whisk until a white mass is formed.

Squeeze the pickled onions with your hands and add to the salad, mix all the components thoroughly

Dress the salad with the sauce and serve.

Beforehand, you can taste the salad for salt, if it is not enough – add more.
