Ingredients of sponge cake for almond cake:
- Butter – 120 g;
- Eggs – 2 pcs;
- Sugar – 100 g;
- Greek yogurt – tbsp;
- Lemon zest;
- Flour – 300 g;
- Baking powder – 10 g;
Ingredients for the cream:
- Milk – 350 ml;
- Egg yolk – pcs;
- Sugar – 100 g;
- Lemon zest;
- Cornstarch – tbsp;
- Flour – tbsp;
- Lemon juice;
- Almonds – 100 g.
Preparation of almond cake:
In a deep bowl, beat the eggs, add butter, granulated sugar and Greek yogurt. Also put the lemon zest into the mixture and mix thoroughly.
Combine the flour and baking powder and sift into the egg mixture. Knead a non-sticky dough with your hands, cover it with cling film and leave it in the cold for 25 minutes.
Pour the milk into a saucepan to prepare the cream, add the egg yolk, sugar, lemon zest and cornstarch. Pour the lemon juice into the milk and whisk until smooth.
Bring the milk to a thickening boil over low heat to create a cream base. Chill the cream, cover with clingfilm
, divide the dough into two equal parts, roll out one of the parts into a thin layer equal to the diameter of the baking dish. Place the layer in the mold, form the walls and bottom of the dough.
Prick the bottom of the dough with a fork in various places. Spread the cream into the mold, level the surface.
Roll out the second part of the dough, cut out arbitrary shapes from the layer.
Lay the shapes in a pattern on the surface of the cream. You can make a tourniquet out of the rest of the dough and place it around the circumference.
Slice almonds into thin slices and sprinkle them on the top of the cake. Bake the dish in the oven at 180 degrees for 40 minutes.
The cake can be sprinkled with powdered sugar for beauty. However, this cake looks good without decorations and has a pleasant citrus flavor.
