The first mentions of sweet dishes are found in the history of many cultures. In ancient Egypt and Mesopotamia, fruit desserts made of figs, dates, grapes and honey were prepared. In Ancient Greece and Rome desserts of dried fruits with honey were also popular.
In the Middle Ages in Europe new ingredients for desserts appeared: spices, sugar, milk and cream. Desserts such as puddings, pastries and cakes became popular. During the Renaissance, desserts became more elaborate and sophisticated. New recipes for cakes, pastries and other sweets appeared. In the 19th century, new cooking techniques such as baking, whipping cream and making creams appeared. Chocolate desserts, ice cream and other sweets became popular.
Today there is a huge variety of desserts. They can be sweet, fruity, chocolate, with or without cream.
Let’s prepare a few delicious and quick desserts.
Dessert #1
Ingredients:
- cookies with chocolate – 100 g;
- orange juice – 50 ml;
- milk – 400 ml;
- zest of 1 lemon;
- vanilla sugar – 1 tsp;
- egg yolks – 2 pcs;
- powdered sugar – 30 g;
- cornstarch – 25 g;
- lemon juice – 30 ml;
- condensed milk – 70 g.
Preparation of the dessert:
Chop the cookies to a fine crumb and grind them with a blender. Pour the orange juice into the crumbs, stir.
Pour a couple of tablespoons of cookie crumbs into each dessert serving bowl, tamp the bottom. Pour the lemon zest and vanilla sugar into a saucepan with milk,
whisk the zest and vanilla sugar into the milk and bring to a boil. Then strain the milk through a sieve, remove the lemon zest
. In a separate bowl, combine the yolks with the powdered sugar and whisk. Pour the starch into the mixture, mix again and add to the milk.
Cook the mixture stirring until thickened. After thickening, transfer the cream base into a separate container, cover with cling film and leave to cool.
Beat the lemon juice with condensed milk with a mixer
.
Add the condensed milk mixture to the custard base, stir.
On top of the layer of cookies put the filling in the form of cream, level it. The surface of the dessert can also be sprinkled with cocoa, cinnamon or chocolate.
Dessert #2
Ingredients:
- 20% cream – 50 ml;
- coffee – 15 g;
- vanilla sugar – 1 tsp;
- banana – 2 pcs;
- egg yolk – pcs;
- milk – 150 ml;
- cornstarch – 20 g;
- ricotta cheese – 100 g;
- condensed milk – 100 g;
- whipped cream – 150 ml.
Preparation of the dessert:
Pour cream into the bottom of the pan, pour coffee and vanilla sugar, mix thoroughly until the granules dissolve. Cut bananas into small pieces, put them in the cream and coffee,
stir and cook bananas over medium heat until soft. Remove the bananas in the coffee from the heat and grind to a mush.
Add the egg yolk to the banana mush, stir and pour in the milk. Pour cornstarch into the mixture, stir until homogeneous.
On medium heat cook until the mixture thickens, and then let cool under food film in a contact. Separately, combine the ricotta and condensed milk.
Pour the whipping cream into the ricotta and whip to lush, stiff peaks. Mix the banana custard base with the cream and place in a mold.
Sprinkle the dessert with chocolate chips and send it to the refrigerator for half an hour. This is a delicious banana dessert for a large group.
