Medovik is a cake popular all over the world, which consists of several layers of sand dough with honey added. Between the layers there is a delicate cream (usually sour cream). On top, it is covered with honey crumbs or a layer of cream. The
history of honey cake goes back to Russian cuisine, where honey was used to prepare various sweets. However, the exact origin of the cake is unknown.
According to one version, the first honey cake was prepared in the early XIX century by the personal cook of the wife of Emperor Alexander I. The cake became popular at court due to its delicate flavor and unique recipe.
Let’s prepare homemade sour cream honeydewick
Ingredients for the dough:
- Butter – 160 g;
- Honey – 180 g;
- Baking soda – 1.5 tsp;
- Eggs – 4 pcs;
- Salt – a pinch;
- Sugar – 150 g;
- Flour – 250 g.
Ingredients for the cream:
- Sour cream 20-25% – 800 g;
- Powdered sugar – 150 g;
- Vanilla sugar – 10 g.
Preparation of sour cream honey cake:
In a pan with high sides, melt butter together with honey. Pour baking soda into the melted mixture, stir and cook for 2 minutes.
Leave the mixture to cool down to room temperature. At this time, beat the eggs with salt and sugar with a mixer until fluffy
. Pour the honey mixture into the eggs in a thin stream and continue beating until the components are combined. Sift flour into the mixture, knead a thick homogeneous dough.
Pour the dough onto a baking tray lined with parchment. Spread it over the entire surface and bake at 180 degrees for 15-20 minutes.
Remove the uneven edges from the slightly cooled biscuit and crumble them into crumbs. Divide the biscuit in two, and then make each one thinner – cut it into cakes.
For the filling, whip sour cream with powdered sugar and vanilla sugar to a cream. Cover each crust with cream, assemble the cake. The
sides and top are also smeared with cream, sprinkle the honeydew with crushed biscuit crumbs
