“Honey prune” – a delicate cake without rolling out the cakes and impregnation

Honey prune cake is not only delicious, but also a very original treat that combines traditional recipes of Russian cuisine and interesting combinations of ingredients. Honey gives sweetness and richness, while prunes add bright fruit flavor and light sourness, creating a harmonious combination. The cake is characterized by its soft and moist texture thanks to the impregnation of the cakes, which makes it especially tender and appetizing.

Ingredients for the cakes:

  • eggs – 5 pcs;
  • salt – a pinch;
  • sugar – 250 g;
  • honey – 100 g;
  • baking soda – 1 tsp;
  • vinegar – 1 tbsp;
  • flour – 300 g.

Ingredients for the cream:

  • 25% sour cream – 800 g;
  • condensed milk – 150 g;
  • lemon juice – 2 tbsp;
  • lemon zest;
  • prunes – 300 g;
  • walnuts – 300 g.

Preparation of the cake “Honey prunes”:

Separate the whites from the yolks, salt and beat with a mixer to a fluffy white foam. Gradually pour sugar into the whites and continue beating until stable peaks.

Gradually add yolks one by one to the protein mass and continue beating

Put honey into the mixture, mix with a mixer.

Quench the baking soda with vinegar, pour it into the egg mixture, sift the flour into it, knead the biscuit dough with a mixer. Cover the baking form with parchment, pour the dough and bake the biscuit at 180 degrees for 40-50 minutes.

For the cream, mix sour cream with condensed milk, lemon juice and lemon zest

. Leave the cream to stabilize for 15 minutes.

In a dry pan roast nuts, soak prunes in boiling water for 10 minutes. Chop the nuts and prunes finely, divide the biscuit into 3 crusts.

Smear each crust with cream, sprinkle with nuts and prunes and assemble the cake.
