Nowadays, few people know what nalistniki are. In the Soviet Union, a large number of housewives cooked this dish constantly to please their families. So what are these interesting nalistniki? It was
the name of pancakes cooked with some intricate filling. The highlight of these pancakes was the dough made of unleavened yolks. Nalistniki were cooked on a hot frying pan, which allowed baking the pancakes as quickly as possible. The nalistniki themselves turned out like thin leaves. Ingredients for nalistniki:
- milk – 1.5 liters;
- lemon – pcs;
- chicken eggs – 13 pcs;
- sugar – 240 g;
- flour – 500 g;
- raisins – 100 g;
- vegetable oil – 50 ml;
- cottage cheese – kg;
- cornstarch – tbsp;
- salt – tsp.
Preparation of nalistniki:
Break 10 eggs in a deep bowl, add salt and 10 grams of granulated sugar, stir the products until the grains of sand dissolve. Sift flour into the egg mixture, gradually pouring the ingredient in batches. Knead a fairly thick and homogeneous dough.
Pour some of the milk into the resulting dough, knead a more liquid mass. Pour the starch into the rest of the flour and integrate it into the liquid dough. Then pour the second part of the milk into the batter, whisk the mixture thoroughly.
After the batter for pancakes has become liquid, pour in additional vegetable oil, mix the products. Bake pancakes in the standard way on a heated frying pan with the addition of a drop of oil.
Grind the lemon peel on a fine grater, you need to get the zest. Into the cottage cheese we break three eggs, pour vanilla and regular sugar. In the process of mixing the components, integrate the lemon zest into the
cottage
cheese.
Raisins in advance should be soaked in boiling water, dry. Transfer the soft raisins to the cottage cheese, mix. Cut a stack of pancakes into 4 triangles, put a spoonful of cottage cheese filling in each one.
Wrap the cottage cheese in a pancake envelope.
In a cauldron, place a few pancakes without filling on the bottom.
Grease the surface with butter, move the rolls there. Smear each tier of pancake envelopes with butter, cover the top with foil.
