Flatbread is an ancient oriental bread that is widely spread in the Caucasus, Georgia, Armenia and other countries. There is a special reverence for flatbread, as this flour product helped many peoples to survive in the past. It
is believed that flatbread should not be placed face down on the table, as well as torn and thrown in the garbage. The tortillas can be given to animals to eat. In some states, however, pigs cannot be fed tortillas.

Each is prepared according to the traditional recipes of this or that state and people. Let’s tell you how to make simple flatbread on kefir.
Ingredients for flatbread on kefir:
- Kefir – 250 ml;
- Soda – 1 tsp;
- Salt – 1 tsp;
- Sugar – 1 tbsp;
- Egg – 1 pc;
- Grated cheese – 120 g;
- Green onions;
- Flour – 450 g;
- Vegetable oil – 60 ml.
Preparation of tortillas on kefir:
Into kefir pour salt and soda, sugar, break an egg. Grate cheese on a coarse grater, chop green onions, pour into kefir and mix thoroughly.
Pour flour into kefir and knead elastic and soft dough

Sprinkle the table with flour, divide the dough into 5 equal parts, form the lumps.
Let the rolls rest for 15 minutes under cellophane. Roll out each dough into 20 cm diameter flat cakes. Make 3 incisions in the middle of the cakes.
In vegetable oil in a frying pan, fry the tortillas on both sides until browned.
As a result, we have browned, flavorful tortillas with cheese and onions.
These flatbreads can be served alone or with sour cream or other sauce.
