When we make this salad, Herring Under a Fur Coat, only some people make the layers in the order that this salad was conceived. In its majority, such layered salads were invented so that several layers complement each other in flavor.
Shaping the salad the right way:
- beets and onions;
- onions and herring;
- potatoes and green onions;
- green onions and eggs;
- eggs and green peas;
- green peas and carrots;
- carrots and beets.
We did the salad from the bottom. See, the beets go very well with the onions, you get a fresh and light flavor. And the onions, in turn, go perfectly with herring – it marinates it and gives a slight spice. Herring without potatoes – nowhere, so the next layer is potato. Do you understand the principle? Each subsequent layer complements the flavor of the previous one and you get a perfect dish in taste.
And completely binds the layers of the salad into one whole – sauce. It doesn’t matter whether you just make a mesh of
mayonnaise
or mix mayonnaise with mustard, which also gives the salad piquancy.
The same principle of flavor complementation works in “mimosa”, where there is a layer of butter – the salad was conceived with red caviar, and it without butter, as well as herring without onions and potatoes does not exist.
For variety of flavor you can still add anchovies, olives, spices, avocado to herring under a fur coat. Just try it and maybe you will like such variations on the theme of the salad.
