In France, they prefer not to crush the meat. That is, cutlets are made from a whole piece of meat, or rather ribs.
In America, cutlets are made from minced
meat.
But there the cutlets are thin and flat, as it is more convenient to put them in burgers. In the CIS countries, cutlets are made with rice and bread. Let’s tell you how to make juicy delicious cutlets.
Ingredients for cutlets:
- minced meat – kg;
- garlic – 4 cloves;
- onion – 350 g;
- potatoes – 300 g;
- white stale bread – 100 g;
- water – 150 ml;
- salt – 1.5 tsp;
- ground black pepper – 1/2 tsp;
- breadcrumbs;
- flour.
Preparation of cutlets:
Soak stale bread in water. Stuffing is desirable to make from different types of meat – chicken, beef and pork, for example.
Pass through a meat grinder also onion, peeled potatoes and squeezed white bread.
Pour cold water into the mixture, pour salt and ground black pepper.
Form 25 medium-sized cutlets, roll them in breadcrumbs or flour.
Heat vegetable oil in a frying pan, fry the cutlets on both sides for 3-4 minutes until golden crust.
Transfer the cutlets to a baking
dish.
Bake the cutlets in the oven at 190 degrees for 20 minutes.
The result is soft and juicy cutlets. Some cutlets can be frozen and fried or baked for several days.
