If you suddenly have guests or need to quickly feed your family with a tasty and hearty breakfast, cottage cheese pies are the best option. The dough is very easy to prepare, even a novice hostess can cope. For the filling of the pie is suitable for any product, baked goods turn out airy, tender and very tasty, both hot and cold. One of the options for filling for fried pies is brine cheese, such as Adygean or Ossetian cheese and green onions.

To prepare the dough you will need:

5% fat cottage cheese – 300 g ▫

Sour cream 10%-15% fat – 120 g ▫

Flour – 450 g ▫

Egg – 2 pieces ▫

Butter 82,5% fat – 50 g ▫ Butter 82,5% fat – 50 g ▫

Leavening agent for dough – 8 g

▫ Salt, sugar to taste

To prepare the filling you will need:

▫ Green onions – 100 g

▫ Brine cheese – 300 g

Method of preparation:

In a deep bowl sift flour and add baking powder.

In a separate bowl mix cottage cheese and sour cream with a blender. It is important to pay special attention to the cottage cheese, so that it was good quality, not sour and without excess whey.

To the resulting homogeneous mass add salt and sugar to taste, sugar is better to add in moderation, otherwise the pies will burn. Once again mix the mass, break two eggs and then knead with a whisk or fork.

To the kneaded cottage cheese gradually begin to add flour and baking

powder.

The dough should be elastic, but not stick to your hands, excessive flour can spoil it. It is better to put the flour mixture aside and use it next time.

To make the dough soft and fluffy, set it aside for about 10-15 minutes.

Let’s start preparing the filling. Grate brine cheese on a coarse grater. You can mix two kinds of cheese in equal proportions, for example, Ossetian and Adygean. Finely chop green onions and add them to the grated cheese. The filling is ready, put it aside.

Divide the dough into equal parts and make circles. In the center of the cake put the filling, about 1.5 tablespoons. Make a circle, giving the pie the shape of a flattened ball. Make the knot when assembling small, so that when frying all the dough evenly cooked.

In a deep skillet, heat sunflower oil, not to boiling. Drop the pies knotted side down into the skillet, the oil should cover the pies completely. After a couple minutes, flip and fry until cooked through.
