Vatrushki are a type of pastry that has a round shape and an open filling. They can be sweet or savory, depending on the filling. It
is believed that the prototypes of vatrushki were round cakes that were baked in Russia in pagan times. These flatbreads were open, and various fillings such as cottage cheese, berries, honey, etc. were added to them.
The preparation of vatrushki did not require complex culinary skills, and the ingredients were available to almost everyone. Over time, the recipe for vatrushki changed and improved.
Now vatrushki have become the simplest possible hearty dish for tea
Ingredients for the dough:
- cottage cheese – 220 g;
- egg – 1 pc;
- protein – 1 pc;
- flour – 130 g;
- sugar – 1 tbsp;
- vegetable oil – 1 tbsp;
- leavening agent – 1 tsp;
- salt – a pinch;
- vanillin – a pinch.
Ingredients for the filling:
- cottage cheese – 140 g;
- egg yolk – 1 pc;
- sour cream – 1 tbsp;
- sugar – 1 tbsp;
- fruits and berries.
Preparation of vatrushki:
In a bowl with cottage cheese pour sugar, vanillin and salt, mix. Break into the curd mixture egg, protein, pour vegetable oil and continue mixing.
Pour into the curd mass of flour and baking powder, knead the dough

Put the soft and slightly sticky batter under the lid and leave it in the refrigerator for 20 minutes.
For the filling, mix sugar, sour cream and egg yolk with cottage cheese. Divide the dough into 4 equal parts, shape the koloboks. Transfer the dough to a baking tray lined with parchment
. Make indentations in each lump using a glass. Cut slices of your favorite fruits and berries. In the recesses of the dough put the cottage cheese filling and berries, fruit.

Bake vatrushki at 180 degrees for 20 minutes.

The result is delicious cottage cheese watrushki. After cooking the baked goods can be sprinkled with powdered sugar.
