Ingredients:
- Eggplants – 1.3 kg;
- Vegetable oil – 50 ml;
- Paprika – 1 tsp;
- Salt – ½ tsp.
Ingredients for the stuffing:
- Stuffing – 500 g;
- Tomatoes – 3 pcs;
- Green pepper – 1 pc;
- Red pepper – 1 pc;
- Onion – 1 pc;
- Garlic – 4 cloves;
- Tomato paste – 1 tsp;
- Vegetable oil – 5 tbsp;
- Spice for meat – 2 tsp;
- Hard cheese – 200 g;
- Parsley – 3 sprigs.
Preparation of baked eggplants with minced meat:
At eggplants cut off the convex barrels, cut each vegetable into longitudinal plates a couple of cm thick. Pour paprika and salt into the oil, stir and place the eggplants
on a baking tray lined with parchment. Put the eggplants on the tray, smear each one with oil and spices
. Bake the eggplants at 200 degrees Celsius for 30 minutes. In the meantime, prepare the filling, dice the tomatoes into small cubes.
Chop the tomatoes in a blender to a puree. Finely dice the onion, mince the garlic. Peel off the insides of the pepper, cut into small slices.
In a frying pan in vegetable oil, saute onion and garlic, mix with minced meat. Fry the minced meat for a couple of minutes, and then add pepper, tomato paste
, mix. Pour salt and spices for meat into the mixture, fry the stuffing on medium heat for 5-7 minutes.
If the stuffing turns out to be thick, you can pour a little water into it.
Grate cheese on a coarse grater. On half of all baked eggplants put a couple of spoons of stuffing, form a cheese cap on the surface of the stuffing and vegetables.
Next, cover the cheese caps with the remaining baked eggplants. On them similarly put stuffing and then cheese.
Bake the dish at 200 degrees for 15 minutes.
After cooking, sprinkle the eggplants with chopped herbs. You get a hearty tasty dish of eggplants and minced meat.
