A traditional dinner for many people is a cutlet with some kind of side dish. As a rule, the side dish is vegetables or pasta. The
classic version of cooking cutlets does not change for a long period of time. However, unusual recipes are gradually added to the typical dish. For example, now you can find ways of cooking cutlets without meat.
It seems that such a variant of cooking is impossible. At the same time, it turns out no less delicious than traditional cutlets.
It is worth telling how to make zucchini cutlets
.
Ingredients for zucchini cutlets:
- zucchini – 400 g;
- carrots – 110 g;
- onion – pcs.;
- potatoes – pcs;
- eggs – 3 pcs;
- cheese – 100 g;
- parsley – bundle;
- salt – ½ tsp;
- black pepper – ¼ tsp;
- paprika – ⅓ tsp;
- oat flakes – 4 tbsp. tbsp;
- sour cream – 2 tbsp;
- dill – a bunch;
- dried garlic – a pinch.
Preparation of zucchini cutlets:
Remove the stalk from the zucchini and grate on a coarse grater. Transfer the mass in a sieve, salt to taste, stir and leave for 15 minutes.
Peeled carrots grate separately. Squeeze out the excess liquid from the zucchini mass, mix it with the carrot mass.

Grate finely peeled potatoes, put them in the vegetable mixture. Break eggs into a bowl with vegetable mixture, pour the cheese grated in advance. Chop
parsley finely, put it to the rest of the products. Salt the mixture, pepper, sprinkle with paprika and mix thoroughly.
Grind oat flakes in a blender, add to the vegetable mixture, mix. Leave for 15 minutes this zucchini stuffing to swell.
Heat vegetable oil in a frying pan, sprinkle a flat plate with flour. From the minced meat form small cutlets, roll in flour and transfer to the frying pan.
Fry vegetable cutlets on both sides for 4-5 minutes under a lid. At this time chop dill, add to the sour cream together with dried garlic, mix.
As a result, we have cutlets without meat. It is recommended to serve vegetable cutlets with sour cream sauce, so their flavor is richer.
