Any sausage can be both healthy for the body and harmful. However, because of the large number of additives in purchased sausage, it is still more dangerous for the digestive system.

Therefore, it is worth preparing homemade sausage. At first glance, it seems to be a complicated process. But, as practice shows, making homemade sausage is easy. It

is only necessary to season the meat before starting to cook sausage. Put the meat away in a glass container for a couple of days before making chicken sausage. To make pork sausage, you need to season the meat for 5 days.

Ingredients for homemade ham:

  • pork neck – 1250 g;
  • ground black pepper – 2 g;
  • chicken fillet – 750 g
  • salt – 35 g;
  • water – 100 g;
  • nitrite salt – 35 g.

Preparation of homemade ham:

Cut the neck of pork into two equal parts. One part is chopped into small cubes of 2×2 cm, no more. The second part is cut into large pieces, which we grind in a meat grinder.

Chicken fillet should be cut similarly to pork – into small cubes. Combine minced pork and meat with chicken fillets in one bowl. Add to the meat classic and nitrite salt, as well as ground black pepper.

This meat mixture is again passed through a meat grinder. In the resulting mass pour cold water, mix the components and knead.
